One-ingredient Magic Ice Cream (plus variations)!

Guys, its good-for-you ice cream! Gluten-free, dairy-free, vegan, no sugar added! Seriously - you simply put frozen bananas into your food processor or Vitamix and out comes ice cream. Many of us have heard of this before and just never tried making it, or we're totally blowing your mind right now and you don't quite believe its possible.  Either way, lets all make this delicious and HEALTHY dessert this week.  Run now and put your chopped over-ripe bananas into the freezer!


Voilà the classic recipe as well as 5 variations on the theme: 

One-Ingredient Banana Ice Cream
Makes 2 servings, about 1 cup
 
What You Need
Ingredients
1 large ripe banana

Equipment
Knife
Cutting board
Airtight, freezer-safe container
Small food processor
Spatula

Instructions
Start with ripe bananas: They should be sweet and soft. 

Peel the bananas and cut them into coins: It doesn't matter what shape or size the pieces are in, as long as they are chopped up into evenly sized and somewhat small pieces. 

Put the bananas in an airtight container: A freezer-safe glass bowl works, or you can use a freezer bag. 

Freeze the banana pieces for at least 2 hours: Freeze for at least 2 hours, but ideally overnight.
 
Blend the frozen banana pieces in a small food processor or powerful blender.

Keep blending — the banana will look crumbly: At first the banana pieces will look crumbled or smashed. Scrape down the food processor. 

Keep blending — the banana will look gooey: Then it will look gooey, like banana mush. Scrape down the food processor. 

Keep blending — the banana will look like oatmeal: It will get smoother but still have chunks of banana in it. Scrape down the food processor.

Watch the magic happen! Suddenly, as the last bits of banana smooth out, you'll see the mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate the ice cream. (If adding any mix-ins, like peanut butter or chocolate chips, this is the moment to do it.) 
Transfer to an airtight container and freeze until solid: You can eat the ice cream immediately, but it will be quite soft. You can also transfer it back into the airtight container and freeze it until solid, like traditional ice cream.

Peanut Butter & Honey Banana Ice Cream
makes 2 servings
1 1/2 peeled medium bananas, sliced into coins and frozen until solid
3 tablespoons peanut butter
2 teaspoons honey

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in peanut butter and honey, and transfer to a freezer container and freeze until solid.


Nutella Banana Ice Cream
makes 2 servings
1 1/2 peeled medium bananas, sliced into coins and frozen until solid
3 to 4 tablespoons Nutella or other hazelnut-chocolate spread

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in Nutella, and transfer to a freezer container and freeze until solid.


Dark Chocolate Banana Ice Cream
makes 2 servings
1 1/2 peeled medium bananas, sliced into coins and frozen until solid
3 tablespoons unsweetened cocoa powder
2 tablespoons cream
1/2 teaspoon vanilla extract

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in cocoa powder, cream, and vanilla. Transfer to a freezer container and freeze until solid.


Cinnamon Dulce Banana Ice Cream
makes 2 servings
1 1/2 peeled medium bananas, sliced into coins and frozen until solid
3 tablespoons sweetened condensed milk
1/2 teaspoon freshly-ground cinnamon

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in sweetened condensed milk and cinnamon. Transfer to a freezer container and freeze until solid.


Strawberries & Cream Banana Ice Cream
makes 2 servings
1 1/2 peeled medium bananas, sliced into coins and frozen until solid
1/3 cup roughly chopped frozen strawberries
2 tablespoons cream

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in strawberries and cream until smooth, and transfer to a freezer container and freeze until solid.
